Ingredients

4 cups of broccoli florets
1 ¼ cup shredded chedder cheese
4 oz cream cheese
8 oz whole milk
1 cup diced yellow onion
2 ½ cup riced cauliflower
1 tbsp olive oil
Salt
Pepper
Cooking spray

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Start to pre-heat oven to 350 degrees. It’ll be roughly 10 minutes before the oven is needed, so you may want to wait for a couple of more steps.
  3. Add the onion to the pan. Cook until soft, roughly 5 minutes.
  4. Add the whole milk and cream cheese; stir until the cheese is melted, roughly 3 minutes.
  5. Stir in broccoli, riced cauliflower, and half of the chedder cheese. Stir until combined and remove from heat.
  6. Season with ¼ tsp of salt and a little pepper.
  7. Spray the cooking spray into a casserole dish.
  8. Add the mixure from the pan into the casserole dish.
  9. Sprinkle the remaining cheese over the top.
  10. Place the dish in the oven uncovered for 10-12 minutes.
