Ingredients
4 cups of broccoli florets
1 ¼ cup shredded chedder cheese
4 oz cream cheese
8 oz whole milk
1 cup diced yellow onion
2 ½ cup riced cauliflower
1 tbsp olive oil
Salt
Pepper
Cooking spray
Instructions
- Heat the olive oil in a pan over medium heat.
- Start to pre-heat oven to 350 degrees. It’ll be roughly 10 minutes before the oven is needed, so you may want to wait for a couple of more steps.
- Add the onion to the pan. Cook until soft, roughly 5 minutes.
- Add the whole milk and cream cheese; stir until the cheese is melted, roughly 3 minutes.
- Stir in broccoli, riced cauliflower, and half of the chedder cheese. Stir until combined and remove from heat.
- Season with ¼ tsp of salt and a little pepper.
- Spray the cooking spray into a casserole dish.
- Add the mixure from the pan into the casserole dish.
- Sprinkle the remaining cheese over the top.
- Place the dish in the oven uncovered for 10-12 minutes.
