Ingredients
- 1.5 - 2 lbs chicken breast
- 2 tablespoons butter
- 4 cups chicken broth
- 1 cup pesto (I used Costco’s Kirkland brand Basil Pesto)
- 1 lb rotini pasta
- 1 teaspoon Italian seasoning
- 6 oz shredded Parmesan cheese ( or Italian blend )
Instructions
- Turn the Instant Pot to saute and melt the butter.
- Dice the chicken into roughly 1 inch cubes.
- Add the chicken and cook while sprinkling on the Italian seasoning.
- Add the pasta and the broth.
- Put on the lid and set the pressure to high and the timer to 4 minutes.
- When the time is up do a quick release.
- Mix in the pesto sauce.
- Serve with the Parmesan cheese on top.
Notes
- COVER the release valve with something, because liquid will likely shoot out of the top when released!
