Ingredients
- 3-4 boneless, skinless chicken breasts (1.5 - 2.5 lbs)
- ½ cup honey
- 1/3 cup soy sauce
- 1/3 cup onion, diced
- ¼ cup ketchup
- 2 tbsp vegetable oil
- 4 minced garlic cloves (3-4 tsps of already minced garlic from a jar)
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup water
- 3 tsp cornstarch
- Optional: Quinoa, rice, and/or vegetables.
Instructions
- Place the chicken in the pot.
- Salt and pepper the chicken.
- Mix the honey, soy sauce, onion, ketchup, oil, and garlic together in a mixing bowl.
- Pour the mixture over the chicken.
- Put on the lid and set to high pressure for 15 minutes.
- While this is cooking mix the cornstarch and water together.
- Perform a quick release when the timer goes off.
- Open the lid and remove the chicken.
- Add the cornstarch to the mixture in the pot.
- Press the Saute button and stir for roughly 5 minutes.
- Cut up the chicken and add it back into the pot ( or just pour the sauce over the chicken later ).**
Serving Suggestions
- Quinoa ( I normally have a big bag of this from Costco. )
- Vegetables with teriyaki sauce.
Notes
** The sauce is pretty sweet, so allowing people to add the sauce to their liking is a good approach versus mixing it all together.
